I have a 1998 U270, and I am having my alternator rebuilt. What should I tell them to set the regulator to output in volts.

I just bought a new alternator and it puts out about 15.35 v at the alternator.

Each brand of battery isolator may be slightly different in terms of the amount of voltage that its diodes drop.
If you have Gel cell or AGM start and house batteries, your goal is to have the (+) start battery voltage battery at 14.0 to no more than 14.1 Vdc when the engine is at 1000 RPM & above.
Most battery isolator diodes drop from 0.75 to 0.90 Vdc. Thus, as a starting point, I would have the repair shop set the alternator at 14.8 to 14.9 Vdc. After installation, if the engine start battery (+) terminal is running at greater than 14.1 Vdc, you need to have the regulator adjusted down (if it is a rheostat adjustable regulator) or the alternator regulator jumpers set to a lower voltage setting (each step is usually worth about 0.40 Vdc) if it is a three step adjustable regulator.
