During a trip this last week, while driving my dash AC would go off suddenly for about 2 minutes then suddenly come on again. This happened about 5 times and appeared to be random. I didn't do anything after it went off to make it come back on. Any ideas why this would happen?

Sounds very familiar. The problem I had was the fan would shut off intermittently when but only when on "high" speed. I don't know if this is the same problem as yours.
I discovered when the fan is on "high" the power is supplied by an auto relay which is off on all other speeds. Replaced the relay and haven't had the problem since. IIRC, the old relay would get warm (or even hot) which helped me find it. The relay is an "auto" style (typically Bosch brand), many are used under the dash. They have a blade style single connector for the 4 to 5 wires that connected to it - easy to swap once you figure out which one it is.

Any auto parts store should have them. They seem to be universal with numerous companies making them and to the best of my knowledge all interchangeable with each other and even have the same terminal numbers on them. It's not near the engine, it's under the dash. For your U270, I'm not even sure it uses one of these for that function. I would think your schematics might help you find it if it does. FWIW, on my coach the relay is to the right of the steering column almost directly behind the ventilation controls.
