Even though I wash the dishes most of the time, the CFO has said that we need to replace the kitchen faucet with one that has a pull-down sprayer. Has anyone done this? We've already purchased another bottle of Aleve in preparation. What else should I be aware of? If they aren't already there, I'm going to add shutoff valves on each line to make life easier for the next owner. (No, we're not selling the coach - yet. Once I do this project I don't intend to redo it.)

I didn't worry about installing shut off valves as we have the water manifold so I can shut off the water there.
The install was not as hard as I anticipated.
My DW allowed me to purchase this one as I like clean and simple designs.

I replaced the drinking water faucet. It took about 20 minutes to get the old one out and the new one in. Another three hours and a couple trips to the hardware store to get the water hooked up. I ended up doing it the way they suggested with the push on connectors. I was skeptical, I was pleased that it worked. Crawling into that small space was challenging.
We replaced the bathroom sink faucet. Very easy. The new faucet connected directly to the original plumbing. I shortened the cold pex line by two inches to make it perfect.
We are looking for a new kitchen faucet too. A higher curved top with a pull down sprayer would be nice. Will it be in the way? Will the sprayer at a higher height splash more water? The original faucet pulls out and can spray. It can splash. Just not sure what the answer will be. Let us know what you choose.
The high arc that we have, linked above, does have the pull out sprayer and does splash when open all the way with water stream hitting the drain assy. I do get some sprinkles sometimes when Carol is doing dishes and I am in the stressless. Of course the sink is directly behind me. The height is not in the way and sort of visually separates the kitchen counter from the salon.
We replaced original with a white Moen 87017W. Removing the old faucet was a lot of work, mostly because working room is so tight up in the recess behind the sink. Once the old one was out, the rest was easy. I used SharkBite quarter-turn valves to transition from the pex tubing to the faucet supply lines. Had to enlarge the hole in the back of the shelf to allow the hose retractor weight to hang free.
So if you were doing the dishes then you wouldn't get stressless sprinkles. ^.^d I think I would like the higher arc. One of these first years we will cross paths. How much fun will that be!

We just recently replaced our kitchen faucet, taking out the original equipment Moen and installing Pfister (see attached photo). I can get the product number for you tomorrow, if that's helpful. The packaging is outside in the car and it's raining right now! <smile>
The responses already posted point to some of the challenges: limited working space under the kitchen sink; tubes that were WAY too long on the new faucet (designed to connect directly to unde-sink plumbing in a conventional home; and in our case, a mismatch with connector threads—metric versus whatever might have been more typical?). I had a contractor friend help, because I knew this task was beyond me, so part of what I'm reporting is what I think I heard/understood. The installation was about a two hour job—not counting trips to Lowe's or Home Depot to get the properly threaded connectors.
We've been VERY pleased with the performance. No splashes, great pull-out, with either steady-stream (normal) or multi-stream spray. Washing dishes is much easier, as is simply washing hands before food prep. This has been one of the most useful upgrades in the coach, just because all of us use the kitchen faucet so many times every day.
