I am currently replacing the original monitor with a 7" monitor so the front wiring is all exposed and whilst checking for any loose connections etc I found this cable neatly tucked away over in the passenger side of the dash. Can anyone help identify what it may have been needed for?

Sure looks like the cable for the electronic engine monitor.
Your cable looks similar to the current popular Cobra CB radio, but your cable has different pin-outs on the connector, so maybe from an older Cobra CB radio? Follow the cable to see where it goes and you may find your answer.

Def not for a CB radio (they have a 4 or 5 pin setup). I would guess a very early attempt at ECM monitor connections.. most likely a MOPAR or GM .
Maybe to a remote mounted cd 10 disc deck
Thank you for all your thoughts regarding the cable identity,
I have the remote CD deck and it is all connected with its own connections. The CB unit is also still in place with its own connections. I tried to follow the cable run and it runs alongside the vent hoses until it goes downward behind the drawer unit then under the carpeted box section that the drawer sits on. I still have to trace it further down the line..........
