I've spent a few hours reading the posts. I am looking for a diagram showing the water system layout, in particular everything in between the shore connections and the distribution manifold.
I am working on a couple of issues and there was some work done that does not appear to make sense.

Nope. Searching for "water diagram" and "water system diagram" pulls up nothing. Got a hint of the magical words to search for?
What is the issue you question? From the outlet of the hose reel the line goes to the water solenoid then to the water pump then to the distribution manifold. Some people have done away with the solenoid and put in a manual valve in its place.
I myself have never seen a water line schematic of these coaches.
Agree - never seen or heard of a water system diagram. If such a unicorn exists, it is a closely guarded secret.

I recall Steve having to sketch our system out to understand the plumbing between the fill valve, fresh tank, and water pump (there was a loop-back in there IIRC).
On genehorr's 1997 there might be/have been an accumulator/expansion tank in the mix. Our 2003 had a variable-speed pump instead.
That's what I was assuming should be the arrangement. What is present is something...different. It looks like someone tried to remove *something* (electric water heater?), possibly cut the wrong line, and reconnected everything in a jumbled mess and/or it wasn't working and tried connecting things in different layouts to get it to work. But I don't have enough information to determine whether it is an incorrect setup or a lack of understanding on my part.
On a similar subject there are two other items I need help identifying. There is a wooden box to the right of the manifold that had *something* inside which is now gone. It looks like the only thing remaining is a thermocouple sensor. Hanging loose and with the hoses intertwined with the water hoses are two black hoses which connect to a small radiator in a box with an electric fan on one side. This may have been in the box (but why would it be enclosed?) but with the way the hoses are laid out there isn't a way for it to reach.
Any ideas?
Everything after the manifold is a neat, orderly install. So I doubt it was originally installed this way.
Oh, well. I guess we will all have to wait until DSD posts their link as they appear to be the only person who knows where it is.

Do you have pictures for reference?
There is a (accumulator/expansion?) tank in the mix. I am assuming that should be connected to the output of the water pump. Part of the apparent mess may be that loop-back arrangement you mention. But tracing the lines it looks like the fill valve is bypassed and doesn't actually do anything now. But the tank doesn't fill.
It does have me scratching my head.

In most (but not all) original water pump bay setups, the expansion tank is mounted near the water pump, but not necessarily connected directly to the pump. Actually, the tank can be mounted anywhere in the coach - it just needs to be connected to a cold water line. I moved our tank to the cabinet under the bathroom sink...gave me some much appreciated working room around the water pump and water heater.

I hope. That little radiator with the 2 black hoses are one of your heater units for the bay. Would really help to have some pictures.
After cleaning a little (yes, the pics are after. Gives you an idea of what it looked like before. And, yes, it does need a good scrubbing) it is starting to make a little more sense.
I included a diagram with horrible handwriting. I think I identified the lines. Part of the problem is I thought the input would start at the beginning, T off into the tank, T off to the water heaters, then go to the manifold. It looks like it goes into the manifold top first. Then branches to the cold water outputs with the bottom going to the water tank system with a T to the hot water (what I think the box with "?" on it is for). I'm guessing the pump works as a check valve to allow the electric valve to fill the tank.
So, possibly not as goofy as I thought.

Thank you! Looks like I have the shore source and the water heater source reversed on my drawing but otherwise looks very similar.
A bay heater makes sense. Something I would have never thought of. That's something that those in the far frigid northern climes, like Dallas, have to deal with and so I don't have much experience with that issue.

Look at pictures 2 & 3. The hand valve to the electric valve is closed.
Of course I notice this now after I've already packed everything up...
Assuming this was the only problem two things accomplished this weekend! Next projects are the leaks in the manifold and the toilet.

Assuming the electric valve has failed in the open position, that valve needs to be closed to use the pump otherwise the water will just recirculate. With it open city water would then work.

I don't know if this helps but included are pics of my water bay which is very similar to yours. I since have removed the large accumulator tank which was leaking and replaced it with a much smaller shurflo tank ( pic shown of it removed but no pic of the new one installed)
My water valve is located on the opposite side without a manual shutoff valve

As Wolfe said, heater for my wet bay.
There is also one directly across from it on the drivers side for the sewage bay compartment, both controlled by a thermostat by the water manifold.

It is filling. Sloooowly. I don't know whether this is due to the pressure reducer also attenuating the flow rate or whether the electric valve is only partially open. But at least something is happening.
How long should it normally take to get it filled to 50%?
The stock monitoring system (Audit?) doesn't show any readings but I am assuming that it takes 10-20 gallons before it will show anything.
The large hose coming out of the top is I assume an air vent line. Correct?

So I had to clean the calcium out of the water control valve to get it to work well. Mine was very slow to fill. Didn't have to replace any parts on mine
Gene, you might want to think about getting the green and white stripe fresh water tank over flow hose off of the rear bulkhead and put it through the floor in front of blue accumulator tank. The fresh tank sloshes water out and onto the bulkhead keeping it wet when driving. Through the floor helps prolong life of the bulkhead.
Is that the large (~1.5"?) hose that I was calling a vent line? If so, that is a great idea. My next concern was what happens if the auto cutoff doesn't work. Who knows the condition of the line/how well it is attached I was imaging the thing breaking and dumping a lot of water. But I do have a slight concern about critters building a next and blocking the hose if just left open out the bottom.

The stock tank readout is not reading. So it looks like a SeeLevel system will be added to the upcoming list. The water pump is not turning on either but the light doesn't turn on either so that may be the latching relay.

Could also be the manual reset breaker that feeds it. That breaker is hid behind the white safety shield in the basement.

The 2 small radiators in the wet bay are connected to the aqua hot and the thermacouple is for the thermostat that tells them when they should turn on.
