Just thinking out loud on paper-
Would the U-Line ice maker serve as a freezer for bagged ice if I turn off the water supply? If yes, I suppose the ice level mechanism would need to be held at the "full" level.
Any thoughts?

Yes. I use it for as much frozen food as I can get in it. Water supply shut off.

It is a small freezer, use it how you like. Just lifting wire lever will keep it from making ice.
For years we've used our ice maker to hold ice cream. No reason it couldn't hold a bag of ice.

Or just remove the ice maker portion for more room if that function is no longer needed.
We love the volume of ice it produces, grew up in Ireland where a coke got one cube of ice and a gin and tonic two! When our ice maker stopped working one of the forum members suggested raising and lowering the iice arm quickly repeatedly for 30 seconds or something like that and it has functioned perfectly since then.
It's a great freezer!
We feel left out. Don't have a U-line. Got one in the Samsung, however
