Trent, looks like the add on pieces are attached to the sides of the original opening. You won't know if glue was used until you start taking it apart. Not a very appeling job.
Cherry gets darker as it ages. Areas that have been covered up will be lighter in color when exposed. Cherry wood has a wide range of color. The heartwood it light in color. Normal colors range from redder to browner. It is a good thing to have aplenty of wood with a range of colors to select from to match colors to existing cabinets. I use Minwax Gelstain (cherrywood) and a satin wipe-on poly to get a close match.
