Things that make me go HMMMMM [460 gas engine questions]

I drove about four hundred miles this weekend. It has been many months since I took my rig out for a drive. I noticed that my oil pressure gauge was reading between 45 and 50. When I stopped for fuel the stick showed I was a quart low. I put in a quart of 10 W 30 and afterwards I noticed the engine seemed to have a deeper resonance to it and the oil pressure gauge read between 50 and 65. Not sure if this is a danger sign or just something normal. The engine doesn't seem to burn oil. I keep  a log of everything I add or do to the rig. According to the odometer I added a quart of oil every 1400 miles or so.
The previous owner told me the rig had a diesel engine in it and it blew up somewhere in Mississippi. He towed it home to Rogers Arkansas and installed a Ford 460 with 40,000 miles on it and a tranny to fit it with 3000 miles on it. I have no reason to believe he lied or that he put in  a junk engine as he drove it for a few adventures afterwards. I also noticed that the speedometer was reading 70 mph but it felt like I was driving between 55 and 60. After driving an ambulance for 37 years and driving this rig for three years I think I can get  a good feel from my seat of the pants driving. Am wondering if the speedometer is starting to fail. I have noticed in the past  a 5 mph difference between the speedo and the GPS. The speedo indicates the rig is going 5 mph faster than the GPS indicates. Sadly I didn't have the GPS this weekend. I plan to hook it up next time. I recently installed a brand new Carb and have noticed a slight decline in gas mileage with the new Carb. When the engine starts the tach reads about 2200 and after tapping the gas pedal it settles down to about 1500 at idle.
The tires on the rig are Goodyear Endurance RSA 10R22.5 141/1391. I'm sure they are oversized as there is very little clearance between the tires and the fenders, but amazingly they don't rub. These tires are in excellent condition and I have no plans to replace them with smaller tires. The previous owner told me this rig gets about 6 miles to the gallon with an 80 gallon fuel tank. From what I have seen the mileage is more like 4 gallons to the mile to which I attribute this to the oversized tires and the new Carb. I feel the rig is underpowered with the Ford 460 in it. Going up a really steep incline the rig speed goes down to anywhere between 48 to 38 mph. But since I'm retired and every day is my day off I'll just accept this as the price of doing business with the Ford 460. I'm sure the rig was built/designed for a diesel with the appropriate power.  One the flatlands the rig seems to have plenty of power and can get up to 70 mph.
The previous owner installed a brand new fridge, a brand new water heater, a brand new water pump and a brand new genny. The tires are in great shape as well. The brakes are almost brand new. So for what I paid for it Don't feel bad.
Anyway unless something catastrophic happens I don't plan on changing anything unless it is absolutely necessary. Some people might say I got screwed buying this rig, others may not. I guess only time will tell. Anyway just thought I'd share these things and see what you guys have to share about them Thanks in advance for any opinions offered.
EMT living in Missouri. Recently purchased 1987 Gran Villa 36 Ft. long,460 Ford engine with 40,000 miles on it, new tranny has 3000 miles on it, coach has 75000 miles on it, new 5000 watt genny new fridge, new tires. Am both excited and scared out of my wits at the size of this beast. Love it but need time to become accustomed to it's size.  I'm sure it will take time to experience all the secrets this RV has to offer. Any and all advice gratefully accepted.

I will try to answer some of your issues, the transmission high gear will be 1 to 1 so there would not be an issue with the engine swap as the diesel trans of your model would have also been 1 to 1 Larger tires would have made your speedo read slower not faster. Carbureted engines have chokes and when first started will run higher rpm's until the throttle is blipped. I am guessing the your oil pressure sender is electric and will change when you run your headlights so if you had them on or off differently than when you stopped and added oil it might be the reason.
