Interesting note, my Zantrax Prosine 2500 W, also seems to run the cooling fan a lot, I keep the coach in a large garage 40'X60' and keep the top of the door open so warm air can escape.  The fan seems to run more than I would expect.  Off and on about 10 times a day.
I have no clue as to what is normal.

That would be the internal fan inside the Xantrex inverter and is keeping the electronics inside from getting to hot.
There is an internal temperature sensor that turns the fan on.
If you feel the box you will see it stays hot which is why the fan comes on a lot.
Electronics don't like heat.
I dont mind that fan running as a replacement inverter is expensive.  :(

Barry, Great answer and total agreement on heat / electronics etc. Just wondering what is normal?
I guess I never paid close attention to it until this summer, so it might be very normal ..

I don't think there is a normal as it all has to do with internal temperature.
ie: If you are charging your batteries, the internal temp will be higher and fan coming on more often.
