What is this [round device on wall]?

Trying to figure out this round thing in the bedroom next to the light switches. Been a mystery since we bought the coach.

Thermostat for that zone.

Side note: add your year/make/model to your account's footer so we know what kind of coach you're asking about.

That round 'thing' is a metal domed grill that covers a pair of wires connected to a temperature sensor thermistor.

Other end of wire is a small white connector located above the rear roof air conditioner inside grill.

Sensor's job is to notify roof air the approximate temperature of the bedroom.  If the connector is disconnected, rear roof air conditioner will instead use the temperature at the front Comfort Control, which can be an advantage during hot weather so both front & rear air conditioners will be controlled by the same living room temperature.
