Fresh water level

We were trying to get rid of the water in our fresh water tank and it appears that the level indicator in the coach is wrong?
1. We unhooked from site water for a couple of days and let it dump into the black tank. 
2. I noticed the black tank was showing about 30 to 40% and the fresh water was still showing 100% full. (the spot we were at had no sewer hook up and we had to be pumped out. I started this process with a empty black tank)
3. When the black tank got to 50% fresh dropped down to 90% full.
4. At this point we hit the gray water bypass and did some laundry, shower, general cleaning then ran the sinks to drain the rest of
    the old fresh water.
5. When the fresh water hit 40% the pump started sucking air.

Wanted to give enough info/history of what was going on.

So is there a way to recalibrate the fresh water meter?  Was thinking about a reset of the silver leaf? Or another issue people may know about.

If your coach didn't do this, I'd be worried that something's wrong.

I'm sure there's a way to recalibrate the sensors but you might be waiting for a while before someone with a newer coach chimes in. FOT is probably a quicker bet.
