Thanks , it's been driving me crazy , decided at 2am this morning that I was missing something after changing fittings etc . Thanks everyone for the input

Thanks guys , got a few issues that need to be looked at when we get home but loving the coach and plan to use the heck out of it this year

Be sure you use the correct cutting tool for a clean cut and secure fit. You cannot "saw" the piping and expect it not to leak.....must have a clean cut.  I replaced some grey piping using sharkbite and pex.....no leaks!

There are some great tools for cutting PEX, square smooth cut every time. I have some for just about every size.

Thanks for all your patience , bought the cutting tool and crimping tool etc , just as a foot note the original zurn qest pec fittings with come rubber washer can be found at ace hardware , not lowes or Home Depot
