King size Bed

Can a King size bed fit in a 1997 40ft. U320?
what modifications would have to be made.

Yes, it could be done.  You would just need to modify the plywood mattress platform - make it wider.  You might have to modify the "night stand" tables on each side, depending on how high they sit.  You would lose 8" of "walk-around" room on both sides of the bed.  Guess how well it would work depends on how skinny your legs are.  8)

Turned 90 degrees, shoved toward curb, you could get around. Right? Lost a nightstand maybe?

Might be better to put a California queen instead of a king.

My 97 320 has a safe in the DS night stand. I think you would have to trim the cabinets  above the night stands as well.
