How tall of wheel chocks should I carry? Are just two adequate?

I got ours at Northern Tool.  They just happen to be on sale now for 1/2 price!  If you have a store near you, copy the online ad and take to store - they'll give you the online sale price.  They are very heavy duty and would probably last a lifetime.  8)

I have 4 of them, tied in two pairs with pieces of nylon rope.  For maximum security you would want a set under rear wheels on both sides.  For a quick stop, one set under a front tire would probably suffice.

Ours are large rubber HF tied together with a short line. I put them in the step recess where I can easily reach them. The retraction cylinders don't come close.
