Hi Bob,
I went through the same deal.  If you have decided to replace the whole system, then go for it and please share the results.
I did not replace the Bose for a few reasons:
- Rewiring a new system is like an open heart surgery to the coach, from the front to the subwoofer, to the speakers, and to all the way to the back bed room.  Cannot reuse any of the Bose wiring.
- Bose system sounds great when it works.  The remote control is Radio Frequency (RF) so you don't have to point to the receiver.  The bed room system connected to the front, and sounds nice for its purpose.

Here is what I did:
- Bought a complete used and working Bose system for $450.  I only need the head unit, so the rest is for spare.
- Add BluRay DVD, replace old TV with a 40'' Sony.
- Leave the dash radio alone because it got its own speakers.  I connected it to the Bose too using the Y-Adapter. However, it got not much use.  While on the road, Bose needs 110V. I don't bother to turn on the inverter or generator.

Still not sure about the dash radio. With the inverter, the alternator, and the solar, should be able to use a home system without issues. While I like the dash radio I just installed, its seems redundant now. Only problem is running out of money right now to fund it all....lol.

OK, since I hate dead threads, I will finish this one out. I pulled out the bose. I put in the Pioneer AVH-X7800BT head unit the po left with me. I also used the pioneer camera for a right side cam. Put in a Pioneer GM-D9605 amp, a pioneer TX-SWS3002 12 inch subwoofer, a pair of pioneer TS-D1730C component speakers in the front, and a pair of MB Quart ZC1-216 component speaks in the rear. These were put in the over heads just before the galley and above the dinette.  Sounds amazing. Haven't really played with the adjustments to the sound yet, the crossovers or gain. As it is, the sound is so much better. The 6 1/2 inch midrange speakers combined with the 12 inch sub makes for one powerful sound, and the tweeters add so much high range. Its a nice sound system. Only mistake I made was to wire it to the ignition side, so that it was off with the key off. But with the key on, the air alarm keeps going off and that is annoying. Might just wire it to the house bank with a simple on off switch. The amp is wired thru the house bank, a 100 amp fuse, and the head unit turns it on via a wire. The amp is in the jackknife sofa behind the heater core, the sub  where the bose acoustimass used to be. Its only stereo sound, so no 5.1 theater. But can output from a blue ray player. It has a DVD player in it, as well as pandora internet radio. a USB connection and can output to a video system as well . A pretty nice unit.
I put the side cam on the passenger side mirror. Ran the wire thru the mirror base. That was a half day affair.
One day, when I fulltime, I will pull my home stereo system out of the house and put it in the coach, or buy a new one. For now, this will do.

Before you bury the Bose, look inside the subwoofer box for the fuse. Mine used to blow all the time. I finally wired it to the outside of the box.

My coach had the Acoustimass system (no LifeStyle) so I was able to reuse the Redline Bose Cube speakers in the front of the coach.  The speakers just used the positive and negative connections so I just used the wire that was already present.  The rear speakers had already been rewired to use a bedroom radio so that wasn't an issue.  I removed the wood column panel by the driver's seat and cut the speaker wires going up the column.  I then drilled a small hole above the panel into the overhead where I  ran the wires into the overhead cabinet to a Sony AV receiver.  I replaced the subwoofer under the sofa with a Yamaha YST-FSW150 (only one I could find that fit) and ran the subwoofer cable back down the wood column to the subwoofer.  The left rear speaker didn't run up the column, so I used regular speaker wire and ran it up the wood column to the receiver.  The Sony receiver has the HDMI ARC support to go with the 32 inch TV I installed.  Works great!
