In addition to cleaning out below the tray: You need to make sure all are gone, so best to set rat poison or traps, carefull of pets and birds.
While you work below, they can go on to living in the metal wire and line walkway down the center and roof of your storage bays. In that area there are are fuel lines, air, hydraulic, gas, and electrical.
Next, impede their return. You can buy a huge pack of Irish Spring on Amazon. The odor, many say, will keep them out of that walkway.
While you have it off, place opened Irish Spring bars at both ends where there is access to the outside. Also check wires and hoses for rodent nibbling, they love wire insulation. Usually here the wires are big enough they only damage the insulation, not the wires.

This is different than in the roof a/c ducts where the a/c wire is small, they can eat clear thru. Also check all drawers and cabinet areas for droppings.
Most importantly, be careful, desease is spread thru rodent pee and droppings, best to google safety in cleaning up after rodents. This is no joke. At rv stores I worked at this was treated as a hazardous cleanup. Even dust from a vacuum can transmit.
