Sewer hose opening

Can I put the cable, water and sewer hose through that opening. There is an extension that comes out a little.
Up to now I just connect and disconnected as needed. But we are staying here for several months.

You can probably run everything other than your sewer hose through the hole and close the bay door.  Your 3rd valve is the same as mine....too close to the door to allow the hose to be connected and still close the door.  I assume that you or a previous owner added that valve, as it's not OEM.  I only dump when full, so it's not a problem for me and the 3rd valve allows you to flush the black tank with grey water.  I would just leave the sewer hose out but disconnected, laying on the ground under the opening, and connect it when it's time to dump.

It looks like a previous owner added a third sewer valve as many of have done.  However it appears that the valve is far enough out toward the side of the coach that you probably cannot get the sewer hose to curve downward quickly enough to close the bay door.  The picture I am including of mine does not show it very well but if the valve is cemented into place close enough to the inner wall, there is distance enough to route the sewer hose out the bottom.

Simple fix. Cut that one off and the pipe so that you have just enough pipe sticking past the wall it comes thru then go buy anither valve  and glue that one. Job done.

Also, find yourself a clear sewer cap. They are available at Amazon.  Just search clear valterra cap.    If you haven't had a " surprise " when you take that cap off , odds are that you will.        A clear cap won't prevent that supprise BUT,  You can at least get the water hose ready or whatever. 
  In our case I'd left the black valve open a small fraction but just enough.  That will NEVER happen again.

That works if there's enough clearance for the valve body to fit without hitting the floor.  You might have enough room, you might not.  I didn't, at least not without additional piping changes.

Run the cable, water hose and shore power cord through the opening.  Make a foam plug to block off the remaining opening to keep out pests.  Close the wet bay hatch.

As for the sewer hose, bdale has suggested the simple solution: Only connect the dump hose when you need to dump.  EASY

I have heard that when people leave the dump hose connected all the time, they soon lapse into the bad habit of leaving the the dump valves open all the time.  This practice, in turn, leads to troublesome buildup of a solid waste mountain in the black tank.

Tank dumping is most efficient when the tank is allowed to fill completely and then dumped.

I second John's approach.  As far as having enough clearance beneath the pipe, I turned my slide valve horizontally for that reason.  That has worked very well for me for several years.
