Easy for that to happen if ice maker on just before driving or while driving.
If not, it may be overfilling. On many ice makers, you can remove the plastic end cap and access the adjustment screw for water volume. Particularly if ice cubes are attached to each other, this may be the issue.
Another, unrelated cause would be that the tube from the water fill to the mold is clogged or misaligned. May be worth a complete defrost if neither of the above items are at issue.
