Does anyone have.an idea what size (gallons) my fuei tank will hold??

Our U-240 measured 100 gallons but we never put more than about 60 gallons, as we never entered in the low fuel guessing game.

Should be a tag visible somewhere on the tank, giving the capacity. Example below is on our tank ('93 U280).

+1 what Mike said. According to the specs, U240 should have a 100 gallon fuel tank.

There is a big difference between the height of the basement in a 240 and your 295. This is the reason you have a bigger tank.
